Cantonese dim sum, also named Guangzhou-style dim sum, is developed on the basis of Lingnan snacks by absorbing techniques from palace pastry in northern China and six ancient capitals in China (Beijing, Nanjing, Xi’an, Luoyang, Kaifeng and Hangzhou) and from Western pastry. With over 1,000 varieties, it ranks first of its kind in China.
